Why Eat Local?
A necessary part of our future survival on this planet will force us to take a look at where our food comes from. Most people are not able to identify the source of their food, compared to 75 years ago when most food was grown locally within a 100 mile radius. Today, most food travels an average of 1500 miles before it reaches most Americans' plates. 70 percent of U.S. agricultural production is industrially processed and most of it is imported. This global trade market creates a greater time lapse between harvest and consumption times, during which vital nutrients are lost. This system of transporting basic food staples such as potatoes and grains requires huge quantities of fuel which is in turn a large contributor to the warming of our planet through CO2 emissions.
